if you are like me and find yourself frequently craving brownies, i have a nice solution for you. i shared some “healthy” brownies a few weeks ago, from paleomg, that incorporate sweet potatoes. this week, i have a brownie recipe i tried from ambitious kitchen that is made with black beans and avocado. i mean, sweettooth or not, these make a great snack! protein, fiber, vitamins, minerals…not to mention, they are gluten free. and if you are one of the many with a gluten allergy, i know you will appreciate them.
Black bean + avocado brownies

- *1 can of black beans, rinsed and drained
- *1 egg + 2 egg whites
- *1/3 of a ripe avocado
- *1 tsp smart balance oil
- *1/3 cup + 1 tbsp unsweetened cocoa powder
- *1/4 tsp baking powder
- *1/4 tsp baking soda
- *1/4 tsp salt
- *1 tsp pure vanilla extract
- *3/4 cup raw turbinado sugar
- *1/2 cup dark chocolate chips
Preheat the oven to 350 F. Spray an 8×8 inch square baking pan. Combine all ingredients, but chocolate chips, into a food processor. Blend for 2-3 minutes until completely combined. Tranfer to the baking pan and stir in chocolate chips. Bake for 35-40 minutes. Remove from oven, let cool, and dig on in!
