Weekly Menu

One way I try to prevent overwhelm during the week is planning our weekly menu in advance. I typically spend some time on pinterest or instagram looking for recipes and write up a menu for the week, as well as a grocery list. I’ve found that grocery shopping on Sunday works best for my schedule, so I’ll typically head to the grocery store after church. As I was browsing some favorite blogs recently, I was inspired by Caroline of Stay the Bomb and a recent post she did sharing her weekly menu. I thought I would start to share mine here, which you can see below!DSC_0551Monday | Butternut Squash and Brussels Sprouts Frittata – Monday’s are a pretty busy night for us. I have a girls group that I go to, so I know that between that and going to the gym after work there isn’t a lot of time left for cooking. Frittata is super simple, and you can use any veggies that you have on hand. I’ll try to cut up the veggies the night before so there ready to go come dinner time. It’s a quick, easy 30-minute meal that also makes great leftovers the next day!

Southwest quinoaTuesday | Southwest Quinoa and Grilled Corn Salad – This recipe by Foodie Crush is just another example of how fabulous quinoa is. Quinoa is a staple in our house, and we try to incorporate it into our diet at least once a week. Like frittata, it can make a great “one dish” meal. Just throw any veggies you have on hand into it with a little bit of cheese, and voila! So good!

sweet-potato-skins-5Wednesday | Healthy Sweet Potato Skins – Sweet potatoes are another staple item in our kitchen, and these healthy sweet potato skins by a Pinch of Yum are one of our favorite ways to prepare them! Packed full of fiber, we never leave the dinner table feeling hungry after these ;)

Pesto-Chickpea-Tomato-and-Mozzarella-Salad-4Thursday | Chickpea, Pesto, Tomato and Mozzarella Salad – This salad is perfect for those warm August nights. Not to mention, I love anything with pesto.

Chile-Lime-Salmon-Fajita-Salads-with-Cilantro-Lime-Vinaigrette.-5Friday | Chile Lime Salmon Fajita Salad with Cilantro Lime Vinaigrette – After a rough first trimester that consisted mostly of a diet of carbohydrates, I am trying hard to eat a well balanced, nutritious diet for the rest of this pregnancy. Salmon is packed full of omega-3’s and is great for baby’s brain development, so I am eating all I can. Not to mention, greens finally don’t make my stomach churn. So salmon salad it is!
